Purchased roasted artichokes for Etto cookbook recipe page 46. Recipe was very good, but not sure the roasted artichokes added anything special. I will try recipe with regular marinated artichokes next time to compare. Love your cookbook!
Use this on our SOL DE NAPOLI pizza and would not choose any other. Nice size fillets to use as āsun raysā on the pizza, they easily melt in your mouth and send you to that magical place on the coast!

We had an incredible experience on the Etto Pasta Tour! Our guide, Gina, was warm, friendly, and incredibly knowledgeableāshe made the entire tour engaging and informative. The factory tour was great; it was amazing to see how thoughtfully and carefully their pasta is made. Lunch was delicious and beautifully prepared, showcasing the quality of their ingredients. The wine tasting was the perfect finishing touch, with a lovely selection of wines. Everything was well-organized and thoughtfully curated. Highly recommend for anyone who loves great food, wine, and learning about where it all comes from!

The easy to follow recipes categorized by type of pasta is brilliant. I had no idea there are so many pastas! I made the Mushroom Cream Sauce and found Etto Trombe pasta at Whole Foods. It turned out so well! I canāt wait to try more recipes. Thank you for making this beautiful book!
