At Etto, we’re passionate about pasta, and as co-producers of this book—and a trusted source for all things Italian on the Central Coast—we’re excited to share our collaboration with Edible Magazine for their first installment in the Edible Cookbook Series

In this book, we take you through over 50 of our favorite recipes, from traditional Italian classics like Pasta alla Norma to creative dishes like Pasta Masala with Chickpeas, Carrots & Cauliflower. Along the way, we highlight different pasta shapes, cooking techniques, and practical tips to help you make each dish your own.

We also share the story behind Etto and the incredible people who help bring our pasta to life. Whether you're a seasoned cook or just starting out, this book is our way of inviting you into our kitchen—so you can bring delicious, pasta-forward meals to yours.
