Living and working in Italy I discovered the joys of artisanal pasta. When I returned home I missed this simple luxury and in 2017 decided to create my own. Etto Pasta was founded in Paso Robles, California, where we've been making small-batch, American-made organic pasta ever since. You are holding in your hands America’s finest craft pasta. This pasta honors my family heritage and Italy’s “la dolce vita”. We hope you love our pasta. We look forward to seeing you at our factory, shop and restaurant located on California’s beautiful Central Coast.

At Etto, a family-owned pasta factory and market, we make USDA Certified Organic pasta using a single ingredient: organic durum wheat semolina milled from American-grown durum wheat. We deeply value our customers and community. Our pasta factory is located in Tin City, an industrial area home to small artisanal winemakers, breweries, a creamery, distillery, and more. This creative hub is located in Paso Robles, California.

Extruded through bronze dies for a naturally rough, sauce gripping texture. Slowly dried for 20 hrs. to preserve aroma, flavor, and nutrition.
