Our Reginette, the "little queen", is a short cut of the more popular long version. This wavy little ribbon is a beautiful shape common to the Tuscan region. The ruffled edges collect the sauce while reminding us of the crown worn by princesses.

Reginette is our go to pasta for all sorts of easy meals. Add a whole variety of things. There is no better pasta than ETTO. Pictured is Pasta alla Minnesota. Homegrown ripe tomatoes. Homegrown garlic. Homegrown Basil. Costco Buffalo Mozzarella. Directions: Very coarsely slice tomatoes. Add microplane grated homegrown garlic. Finely chop homegrown basil. Place in container with S&P and your favorite EVOO. Cover and let stand for 2-4 hrs. +/- Finely chop as much Buffalo Mozarella as you need. Cook Reginette to desired endpoint. Drain and immediately add chopped mozzarella to hot pasta. Stir and let mozzarella incorporate. Add marinated tomatoes and enjoy. This is addictive due to both the homegrown ingredients AND the BEST pasta. We have been eating this every 3 days (at least) during our albeit short season here but there is nothing better.
