First, I’ve got to tell you… Sono Romano di Roma. I mean, I’m Italian. Born and grew up in Rome.

And I’m a buongustaio, which is Italian for ‘gourmet’. I also am a very good cook.

Your pasta is excellent. Rigatoni are the most difficult pasta to make correctly; I can tell immediately if they are not top quality.

Your pasta is top quality. The texture, the ‘tooth’ as we say in Italy, is perfect. The flavor is perfect. I like it a lot.

I’ll definitely order it again.

what fun! we completely nerded out at the pasta factory - we learned so much and will forever after avoid eating non-organic US wheat! what pride everyone had about the plant and the pasta you’re producing, Lunch at Etto was - as always - a huge treat, helped along by gift cards in our factory bling bags! Brian himself poured our tasting at Giornata - he got roped in (not his usual gig) - but we got to hear him talk about what & how Etto/Giornata is trying to achieve. Respect to all of you for building a great small business in Paso Robles!

The pasta arrived on time and it was packed well! The best part is how delicious this pasta is, my wife who is gluten sensitive is able to eat it without any issues!!

I use this pasta frequently. You cannot beat the taste and texture of it. It pairs well with most meats and sauces. I cannot imagine life without my Etto pastas.

We visited the shop in Paso and grabbed a giant bag. Great pasta and it stayed fresh and delicious as we worked through it. We liked it so much, we ordered two giant bags for winter. Great deal, and they have a good selection other items in the shop too. We received our order quickly and easily.

While visiting family in Paso Robles two years ago from Colorado, we were introduced to your products. Now despite the 1000 miles apart we are, we only eat pasta at home from you all. Obviously, we are big fans and love your product! We thank you for the quality in which you create!

This pasta is as good as we had in Florence. We made pesto from our home-grown garlic scapes. We paired it with Giornata Vermentino. Each bite and sip was delightful.
