The original rooster pasta. Creste di Gallo, meaning "coxcombs" in Italian, referring of course to the roosters red combs. The shape is hollow inside and and originates from Florence. These fun pastas are very versatile and can be used with just about any sauce...even those with chicken!

We enjoyed Creste di Gallo pasta with my own dairy free pesto. It was easy to cook the pasta to al dente consistency: I sensed the cooking window was wider than many other pastas; so it was more forgiving. I made my pesto from basil and garlic supplied through our summer season CSA farm and froze it. Adding olive oil first to the drained pasta, I found it easy to mix in the pesto sauce quickly and thoroughly. Everyone enjoyed the flavor and texture.
