We first learned about Etto Pasta from Tally Farms who has two Etto Pasta shapes as purchase options for their custom vegetable boxes. We loved the pasta so went to the Etto store to see what else was there. Found out we could buy a large bag of our favorite shape "Sedani". We ran out of that quickly but its been too hot in Atascadero lately for a trip there with our dog so placed a big order online. Got a big bag of Sedani and a few boxes of other shapes and sizes to try. The pasta itself is more filling than most grocery store pastas especially if you make each portion an "Etto" portion.

First, I’ve got to tell you… Sono Romano di Roma. I mean, I’m Italian. Born and grew up in Rome.

And I’m a buongustaio, which is Italian for ‘gourmet’. I also am a very good cook.

Your pasta is excellent. Rigatoni are the most difficult pasta to make correctly; I can tell immediately if they are not top quality.

Your pasta is top quality. The texture, the ‘tooth’ as we say in Italy, is perfect. The flavor is perfect. I like it a lot.

I’ll definitely order it again.
