Yes. Etto Pasta is produced in Paso Robles, California using organic durum wheat semolina milled from American-grown wheat. It is not imported from Italy or any other country.

Bronze-die extrusion means the pasta dough is pushed through bronze molds rather than industrial Teflon dies. This creates a rougher, more porous surface that grips sauce far better than smooth commercially-made pasta. All Etto Pasta is bronze-die extruded.

Etto Pasta is slow-dried for 19 hours at low temperatures. This preserves the integrity of the semolina and produces authentic al dente texture when cooked.

Cassoulet (Tarbais) Beans

I havent used them yet, but the company is great, I want to make a cassoulet when the weather turns cooler- I have purchases Cassoulet kits in the past from D'Artagnan, this time I want to make it on my own,,,

I like a big fleshy bean and the product quality didn't miss. These lima beans would be good in any bean recipe from simple to complex. This time I put them into a smoked chili with slow smoked chuck, linguica and jalapeños from my garden.
