Radiatori with Sungold Tomatoes

Ingredients

  • 1 lb dried Etto Radiatori Pasta
  • 2 tbl good quality olive oil
  • 1-2 pints sungold tomatoes
  • 3 large garlic cloves, minced
  • 1-2 Burratas
  • Fresh basil leaves
  • Kosher salt
  • Grated parmesan

Preparation

  1. Bring 4 quarts of water with 1 tbl kosher salt to a boil. Cook radiatori pasta according to directions on box until al dente.
  2. Meanwhile, heat olive oil in a large skillet or wok over high heat. Add tomatoes and cook, stirring occasionally until they burst. Add garlic and cook until a sauce begins to form.
  3. Drain pasta, reserving 1-2 cups of cooking water. Add pasta to the skillet. Stir to combine pasta with sauce, adding just enough cooking water to form a creamy sauce.
  4. Divide into bowls, top with half a burrata, torn basil leaves, parmesan, and a drizzle of good olive oil.
