About the recipe

This Sedani pasta dish combines roasted peppers and onions, and whole peeled tomatoes for a rich, flavorful, and hearty dish.


Ingredients

  • Extra virgin olive oil
  • 1 jar roasted peppers, drained cut into strip
  • 1 jar roasted onions, drained and sliced
  • 14 oz Bianco di Napoli whole peeled tomatoes, lightly crushed by hand
  • 4 links Italian fennel sausage, grilled and sliced
  • 1 lb dried Etto sedani pasta
  • finely grated pecorino romano
  • Italian parsley, chopped, for serving

Preparation

  1. Cook sausage either on the grill or on a skillet and set aside.
  2. Meanwhile, heat olive oil over medium heat in a large skillet or wok.
  3. Add peppers and onions and saute until just beginning to brown.
  4. Add the tomatoes and bring to a simmer.
  5. Cook for about 2-3 minutes until sauce just begins to thicken.
  6. Meanwhile, In a large pot, bring 4qt of water with 1-2tbl salt to a boil and cook pasta according to package instructions until al dente.
  7. Reserve a cup of pasta water before draining
  8. Drain pasta and add to the pan with the sauce.
  9. Toss pasta with sauce, adding pasta water if needed to loosen the sauce and create a cohesive consistency.
  10. Divide into bowls and top with cheese and parsley.
