About the recipe

Asima's always bragging to me about the great creations she creates with our pasta. My first question is always, "Did you take a picture?" followed by, "Can you send me the recipe?" Finally she'd done both - so here you go - a new recipe from our own Asima. She even gave me a little credit by using my technique for marinating shrimp in 'Nduja. 


Ingredients (all at Etto!!)

  • 1 pkg fresh Casarecce (or your choice of shape)
  • 1/2 onion, sliced thin
  • 1 jar Corona Beans, drained
  • 1 pkg Tempesta ndjua or Alle-pia 'Ndjua
  • 1 lb fresh or frozen Shrimp
  • 2T olive oil

Preparation

  1. Saute onion in olive oil in a medium skillet and boil water for pasta.
  2. When onions are translucent melt 3 TB (or more to taste) of 'Ndjua in the hot pan and add the shrimp (with or without shell) and corona beans.
  3. Cook 3-4 minutes until shrimp is cooked turning once.
  4. Cook pasta and add al dente pasta to the skillet. Add a little pasta water as needed to coat the pasta. Salt to taste.

    For a fun change try cooked fava beans instead of corona beans. Sprinkle with crushed Calabrian chili if you like it hot!
