About the recipe
Here's a recent dish that was shared by text from my friend Ryan from Paix Sur Terre winery (speaking of small wineries to check out). It's Elk ragu which he apparently enjoyed with 2 bottles of Italian wine. Next time invite me. The recipe was short on details, but this should work fine.

Preparation
- Cook the carrots, celery and onions with a bit of olive oil in a pan or wok big enough to add 1 LB of pasta.
- Boil water for pasta w/2TB Kosher salt
- Add the meat and Italian seasoning and powdered garlic and a bit of salt and pepper.
- When meat cooks through add the tomato paste and cook a couple minutes longer until it begins to caramelize. Add the crushed tomatoes and a little pasta water.
- Cook the pasta - sedani in this case. Follow instructions on the bag.
- Add directly to the sauce, stir well, then add some pasta water until the desired consistency. Buon Appetito!
