About the recipe

I love making baked pasta with our sedani. As we have a few more cool nights before summer and my brain switched to summer veggies I hang on to the comfort of baked pasta as long as I can.

The Last Baked Pasta

Ingredients

  • 1/2 red bell pepper
  • 1 small onion, peeled and chopped
  • 4oz chopped spinach or kale
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons tomato paste
  • 8oz crushed tomatoes
  • 8 oz sausage or ground Mighty Cap Mushroom
  • Italian Seasoning to taste (1TB)
  • 1 lb Dried Etto pasta
  • Kosher salt
  • 1/2 cup Bechamel (See Below)

Bechamel Sauce

    • 4TB Butter
    • 2TB Flour
    • salt, pepper and nutmeg to taste
    • 1 cup warm milk

Melt butter, and add the flour and whisk add a pinch of salt, pepper and nutmeg. Once golden in color whisk in the milk. Turn heat to the lowest setting and turn off when properly thickened.

Preparation

  1. Preheat oven to 400F.
  2. In a wok or large sauce pan add olive oil, peppers and finely chopped onion. Cook until translucent.
  3. Add the ground meat and then the Italian seasoning with tomato paste. Brown the meat or the mushrooms and add the milk and crushed tomatoes. Mix well.
    Boil the pasta water and add 2TB Kosher or sea salt. 1/2 the recommended cook time.
  4. Once you've cooked the pasta to 1/2 the recommended time, mix well with sauce. This step can be done in a bowl, but a wok is a great place to mix this. Add enough cooking water to make this a pretty saucy pasta. More water will absorb into the pasta as the dish continues to cook. This might require a bit of practice.
  5. Add the pasta to a shallow ovenproof dish. Spoon Bechamel sauce over the top and add grated parmesan cheese.
