A friend just gave me some delicious bacon that he makes so I came up with this recipe to celebrate. Easy and oh so good.

Mezzi Rigatoni with Bacon, Blue and Broccoli

Ingredients

  • 1 small head or broccoli and/or cauliflower broken down into very small florets (I used both)
  • 1/4 LB bacon (or pancetta) cut into small strips
  • 4 tbsp Etto olive oil, plus more to finish
  • 1/4 small onion, diced
  • 1 TB garlic, powder
  • Salt and Pepper to taste
  • 2TB flour preferably Double 00
  • 1/3 cup warm milk
  • 1 box Etto mezzi rigatoni
  • 1/4 LB Blue Cheese domestic or Gorgonzola or more to taste
  • Arugula and Parmesan cheese for garnish

Preparation

  1. Preheat oven or toaster oven to 300 and cook the bacon for about 15 minutes until the fat is rendered and the bacon begins to brown.
  2. While the bacon is cooking put the small broccoli florets in a bowl and season with salt, pepper, garlic powder and flour - add some of the olive oil and mix well.
  3. Boil the pasta water and add salt or salt discs.
  4. Heat remaining oil in a large skillet. Cook the onion with the seasoned broccoli over medium/high heat and add pasta to the water.
  5. Once the broccoli begins to brown and the onions turn translucent add the bacon and the fat(optional) and stir well. After a couple minutes add the milk and the blue cheese.
  6. Top with arugula, Parmesan, and a drizzle of oil. Buon Appetito!
