Rancho Gordo Beans

We keep adding new beans from our friends at Rancho Gordo. Asima just told me how great these zipper cream field peas were. When she told me you can make them without a long soak I was sold. I have a problem remembering to soak beans. The pasta dish I made with these was super easy crammed with protein and fiber and best of all super delicious.

Zipper Cream Field Peas


Ingredients

  • 3oz pancetta, bacon or ham diced into small cubes
  • 1 tbl Olive oil
  • 1 TB Italian seasoning
  • 1/2 small onion diced
  • 1 cup Rancho Gordo zipper cream field peas
  • 1 bunch hearty greens (I used chard but kale or others could work)
  • 1 box Etto Mezzi Rigatoni
  • Lots of Parmesan cheese
  • salt to taste

Preparation

  1. Put the beans in a small pot unsalted with ample water and bring to a boil. simmer about 1/2 hour until the start to get tender and then add some salt to taste.
  2. While the beans are simmering add the olive oil to the pan and add the diced onions. Once they become translucent add the ham and cook until the fat is rendered. Add the Italian seasoning and mix well.
  3. Add all of the greens (in batches if needed) and mix until wilted. Cook for a few minutes until all greens are well wilted and tender. Add some Parmesan cheese and mix well.
  4. Cook the pasta following directions on the box and remember to salt the water.
  5. Add the pasta to the pan and mix well and then add the beans. Use cooking water from the pasta and/or the beans to make this the right consistency.
  6. Plate with more Parmesan cheese and serve with warm bread. Buon Appetito!
