
Scoppio del carro is an Easter tradition carried out in Florence for close to 1000 years. Easter in Italy has so many traditions there are too many to count. The celebrations last for days and usually culminate with a countryside picnic on the Monday after easter Sunday.
Easter was always an important holiday when I was growing up with my grandparents. After Easter Mass, my grandmother would spend the day cooking. Without these early memories and experiences I doubt Etto would exist. I'd help her make handmade ravioli, and watch her make braciole, stuffed artichoke, Easter ham and her signature lemon meringue pie.

Unfortunately my twin daughters never got to try my grandmother's cooking, but I kept all her old cookbooks and hopefully have done her some justice. Here's an old shot of the Easter twins from many moons ago. This Easter will be an empty nest dinner, but I'll still try to channel some of Grandma Ada's love.
