Pasta Weather

We had a light show last evening over the western hills. Then after tucking into bed the thunder eventually shook the house and the heavens opened up with some serious but short rain bursts. It's nice to see some rain back with green hills inevitably to follow. When the rain falls my thoughts go to pasta more than usual if that's possible.
 
Pictured above is my newest go-to on Wednesday night - a simple pinsa with local toppings (this one has zucchini, Alle-pia nduja and scamorza or smoked mozzarella). The ravioli features the Sicilian trapanese pesto that we carry with some diced zucchini. Ravioli may be the ultimate weekday comfort food that I probably don't eat enough, but why spoil such a good thing. As the days grow shorter it becomes harder to keep up with demand for these marvelous pillows and I feel guilty being responsible for their early depletion.
 
While the summer is trying to keep a bit of a hold on us, change is in the winds, and soon the leaves will begin turning brown and red, both on the trees and in the vineyards and the sweaters will come out not just for our cooler nights. This is such a beautiful time of year when we still have the last of the summer produce like pasta's perfect partner "the tomato", but it begins to make sense to make baked pasta with them too.
