Your pasta is excellent. Rigatoni are the most difficult pasta to make correctly; I can tell immediately if they are not top quality.

what fun! we completely nerded out at the pasta factory - we learned so much and will forever after avoid eating non-organic US wheat! what pride everyone had about the plant and the pasta you’re producing, Lunch at Etto was - as always - a huge treat, helped along by gift cards in our factory bling bags! Brian himself poured our tasting at Giornata - he got roped in (not his usual gig) - but we got to hear him talk about what & how Etto/Giornata is trying to achieve. Respect to all of you for building a great small business in Paso Robles!

I use this pasta frequently. You cannot beat the taste and texture of it. It pairs well with most meats and sauces. I cannot imagine life without my Etto pastas.
We visited the shop in Paso and grabbed a giant bag. Great pasta and it stayed fresh and delicious as we worked through it. We liked it so much, we ordered two giant bags for winter. Great deal, and they have a good selection other items in the shop too. We received our order quickly and easily.

This pasta is as good as we had in Florence. We made pesto from our home-grown garlic scapes. We paired it with Giornata Vermentino. Each bite and sip was delightful.
