
I first heard about Bianco DiNapoli way back in 2011 while completing construction of my backyard pizza oven. I was already familiar with the DiNapoli tomatoes since we carried them while I worked at Sam's Italian Deli in Fresno. This new product was a partnership between a longtime California tomato family and Chris Bianco who at the time was considered one of the best (if not the best) pizza makers in the US. Back then these tomatoes were only available to his Pizzeria and a few other famous restaurants like Zuni Cafe and Chez Panisse. I knew that I had to have them to make my pizza. I was obsessed with everything about them: the story, the beautiful can with artwork from Chris Bianco's father, and the fact they came from a California organic farm.
I reached out to the owner, Rob DiNapoli, and he offered to help me get some of his tomatoes and thus a friendship was born. Back then the tomatoes only came in the big foodservice number 10 cans. I would open each can, break down the contents, and store them in smaller containers for my personal use. I loved the quality of the tomatoes and was sure that I was making the best pizza in Paso Robles with their help. Little did I know that some day I would have a pasta factory and restaurant. After years of buying these tomatoes for personal use we launched Etto with Bianco DiNapoli tomatoes as one of our original product offerings. Then when Etto Pasta Bar opened we decided to use their tomatoes for all of our tomato based dishes. To this day these are still the tomatoes I use at home for all of the sauces I make. I try some of the others we carry, but Bianco DiNapoli will always be my goto.
Now we buy their tomatoes by the pallet - that's about 2,500 pounds per pallet. For a one location business, we've become a pretty big customer and, even better friends. As Etto has grown Rob and his team have always been very helpful with advice and sharing contacts in the food world (It's a jungle out there - but that's a story for another time). We spent some time together recently, met folks on their marketing team and they were open to collaborations. I must admit, I'm a little fuzzy about how all this collab stuff works, but I am very happy for any opportunity to align Etto pasta with a brand and a team I so admire like Bianco DiNapoli.

I'm continuing my career of overexposure throughout the social media world. Thanks to those of you who have given me positive feedback, and to those of you with negative thoughts who have bitten your tongue. I'm a little more comfortable writing on a keyboard than in front of a camera.
