Etto Meets Echo

ECHO is an incredible example of what can happen when a community comes together.

Lately I've been doing a little bit of traveling around our state slinging Etto pasta of course. These trips are a stark reminder of how great we have it here in SLO County. I think the #1 thing we have here is our great sense of community. I always struck by the time I spend at Etto and in Tin City seeing our community in action. Life is slower than in other places in California, we have time to talk about food, travel and even the weather. Visitors often seem to be in a mild state of bliss and often yearn to move here some day.
ECHO which began as an organization just 25 years ago to help the unhoused gain comfort and food now operates 2 campuses (Atascadero and Paso Robles) with a new family facility in Atascadero nearing completion ahead of schedule. The remarkable thing about ECHO is that over 1500 local volunteers help make the program successful through their service and time. My recent visits to Los Angeles made me wonder how many folks rush around town seeing problems but not thinking about solutions or service to solve them. Many of our regular Etto customers have cooked and continue to cook meals for ECHO and I thank you for this.
ECHO's track record has become legendary. Last year alone, they set a record by helping 383 individuals and families secure stable housing breaking the previous year's record of 352 in 2024. At Etto we've always done what we can to support ECHO's mission whether by donating to their Empty Bowl fundraiser, providing pasta for lunches at the shelter, or supporting the dinner cooking groups. I've also helped raise funds for the new Family Center and have donated proceeds. on special Etto Pasta Bar restaurant nights.
Recently I was asked to join the board, a position I accepted and do not take lightly. So many folks in our community have worked to build momentum and make ECHO a success that it not only contributes to so many local families, but also to the great quality of life we enjoy here. I want to do all I can to help their programs continue to thrive. I also believe that the model ECHO created can be replicated in other communities.

Last weekend was a busy one at Etto Pasta Bar. I don't blame you if you stayed away.
I like looking at the sales numbers which is easy to do via a phone app. It's interesting to see trends and such. This weekend was particularly interesting and a holiday weekend with cooler weather really juiced (or sauced) our pasta sales. I was excited to see we sold 362 orders of pasta on Saturday. That's a big number for sure, but I couldn't believe that on Sunday we sold exactly 362 orders of pasta again. I'm not sure what the chances are of that happening, but it was pretty exciting.
Lasagne was the #1 seller on Saturday and Bolognese was #1 on Sunday. #2 both days was Mighty Cap mushroom with 39 orders on each day. We thank all of you who made this happen and let's keep this pasta party going as this cooler weather sticks around for a bit.
