
Several years ago back when we just had a single pasta machine and let's just say a few enthusiastic customers for our pasta my buddy Chris Batlle started a new venture in his garage. I had plenty of pasta and Chris had a burgeoning mushroom growing hobby and we had a great trade going - Pasta for Mushrooms about once a week. A year or so later Chris was ready to start selling some mushrooms and I offered up outside the front of our store on weekends for him to peddle the shrooms. Another year went by and Chris moved into a bigger facility and began to scale up and he began appearing in many of the same restaurants that serve Etto pasta and even more.
Chris and I remain close friends and we often talk about the joys and trials and tribulations of running our own food business. It’s been great since we have followed a similar path and have without sounding cocky contributed to our local food scene in a significant way. His mushrooms have become a staple ingredient in my kitchen just as they have for so many of you and have in my opinion contributed to a better quality of life.
Chris and I also have been on similar expansion paths and while the journey hasn’t been easy, I’m so glad I’ve had someone like him to share it with. While we were constructing our new facility Chris was looking to also expand his production into a new facility. We shared plans and ideas and I can now say that I am so incredibly happy and proud to have Chris and Mighty Cap Mushroom as my newest neighbor in Tin City. After a couple years of planning and a few months of construction (much of which Chris did on his own) his new facility is up and going. I’m so proud and can say without a doubt it’s one of the most impressive things I’ve seen in the food world for a long time.
