Our ravioli has been extremely popular lately. The question I get asked most often is what type of sauce should I use for this type of ravioli. I always suggest that the simpler the better. For example, I doubt there is a better sauce for our beef ravioli than a simple butter sage sauce. We even carry a sage butter in the market to make things very easy. All you need to do is melt the butter add some chopped sage, add the cooked ravioli and swish in a bit of paste water and slide it on the plate.

Pictured above is a simple little sauce where I simple sauteed some onions, peppers and mushrooms in a little butter until tender and then added our chicken and mushroom ravioli. It was delicious! 

I hope this helps for a little ravioli inspiration, my tip is to keep it simple, fresh and seasonal with what's on hand.

Etto Ravioli with a Simple Sauce


Ingredients

  • Fresh stuffed pasta from Etto
  • Butter
  • Onions
  • Mushrooms
  • Peppers

Preparation

  1. Boil water for the pasta
  2. Chop up the onions, mushrooms, and peppers and sauté in a pan with butter until tender.
  3. Cook the pasta following the instructions
  4. Add the pasta to the pan with the ingredients and mix well
  5. Put on a plate and enjoy!
