For those of you who listened to our recent podcast on Where Wine Takes You. This is the dish I made Stephy on our first date - even though she thought it was a study session. I thought this would be appropriate for Valentine's week.

Preparation
- In a big saucepan or wok add 1 TB olive oil and the peppers and onions to the pan with medium heat. After they soften add the sausage and break up with a wooden spoon.
- Meanwhile, In a large pot, bring 4 qt of water with 1-2 tbsp salt or a couple salt discs to a boil and cook pasta according to package instructions until al dente.
- Cook the sauce until the sausage is cooked through and begins to brown - add the Italian seasoning and tomato sauce and paste and turn down the heat to low and mix well.
- Add the pasta directly to the sauce and mix well and add pasta water as necessary to create a cohesive dish.
- Plate with a spoonful of ricotta cheese, parsley and olive oil.
