For those of you who listened to our recent podcast on Where Wine Takes You. This is the dish I made Stephy on our first date - even though she thought it was a study session. I thought this would be appropriate for Valentine's week.

Sausage, Pepper and Onion Pasta (for a 1st date)


Ingredients

  • Your favorite shape of Etto pasta - fresh or dried.
  • 3 tablespoons Olive Oil
  • 1 bell pepper sliced into ribbons
  • 1/4 medium onion diced
  • 1/4 lb sweet or hot Italian sausage
  • 4oz pasata or crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon Italian seasoning
  • Kosher salt or salt discs
  • Ricotta cheese
  • Parsley

Preparation

  1. In a big saucepan or wok add 1 TB olive oil and the peppers and onions to the pan with medium heat. After they soften add the sausage and break up with a wooden spoon.
  2. Meanwhile, In a large pot, bring 4 qt of water with 1-2 tbsp salt or a couple salt discs to a boil and cook pasta according to package instructions until al dente.
  3. Cook the sauce until the sausage is cooked through and begins to brown - add the Italian seasoning and tomato sauce and paste and turn down the heat to low and mix well.
  4. Add the pasta directly to the sauce and mix well and add pasta water as necessary to create a cohesive dish.
  5. Plate with a spoonful of ricotta cheese, parsley and olive oil.
