To celebrate the launch of our pasta club I decided to test our special club release pasta with one of my favorite comfort dishes of baked pasta. As of now I'm not allowed to tell you what this pasta shape is, but you might be able to guess. Use your favorite Etto pasta shape to create this recipe. You might just want to join the club to get this exclusive pasta shape. This dish is more comforting than deep dish pizza and like a hug from Nonna.

Preparation
- Cook the onion and ground sausage in a large frying pan or wok and add 1TB Italian seasoning.
- Heat the oven to 375.
- Add 2 TB tomato paste, greens and tomato puree to the pan.
- Put pot of water on to boil. Drop pasta into boiling water with generous amount of sea salt or a couple Etto salt discs. Cook to 50% doneness as listed on the cooking time.
- Add the pasta to the sauce and mix well adding pasta water as needed to make it a little on the soupy side.
- Put it in a oven safe casserole dish and top with a mixture of scamorza and parmesan. Bake for 20 minutes or so until the top is golden brown.
