About the recipe

Here is a spin on the classic, ziti al telefono. This dish originated in Naples and was named after the cheese in the dish that stretched like the telephone lines that zig zagged across the city. This can be made like the classic version without meat. I like to use a mixture of mozzarella, sharp provolone and some parmesan on top of a bechemel. We substitute our sedani pasta for the ziti.
 
Here's how to make it.

Ingredients

    • 1 LB or more Etto sedani pasta
    • 1/2 pound Ground meat or mushrooms (or both) Sausage, beef or lamb works well
    • 1/2 small onion
    • Olive oil
    • 1TB Italian seasoning
    • 2TB Tomato Paste
    • 1/4 cup milk
    • 1 1/2 cups pureed tomatoes
    • 6oz cubed mozzarella
    • 3oz cubed sharp provolone
    • 3oz grated parmesan
    • 1 cup bechamel

  • 4TB Butter
  • 2TB Flour
  • salt, pepper and nutmeg to taste
  • 1 cup warm milk

Preparation

  1. Cook the carrots, celery and onions with a bit of olive oil in a pan or wok big enough to add 1 LB of pasta.
  2. Boil water for pasta w/2TB Kosher salt
  3. Add the meat and Italian seasoning and powdered garlic and a bit of salt and pepper.
  4. When meat cooks through add the tomato paste and cook a couple minutes longer until it begins to caramelize. Add the crushed tomatoes and a little pasta water.
  5. Cook the pasta - sedani in this case. Follow instructions on the bag.
  6. Add directly to the sauce, stir well, then add some pasta water until the desired consistency. Buon Appetito!
